7 Grain Oatmeal Cake

Ingredients :
1 cup - Canola oil, 2 Cups-Maple syrup, 1 ½ tsp-Vanilla, 2 cups-Unbleached white flour, 3/8 cup-Soy flour, ½ cup-Cold water, 1/2cup-Soy milk, 1 ½ tsp-Grated lemon rind, 1 ½ tsp-Sea salt (optional), 3- Egg whites, 2 tsp-Cinnamon, 1 tsp-Baking powder, 1 cup- Cooked 7 Grain cereal, 5 cups- Rolled Oats, ½ cup-Raisins (optional), ½ cup- Chopped nuts.

Method :

Preheat oven, oil pan

Cream together the Canola oil, maple syrup and vanilla, set aside

Mix until smooth the flour, soy flour, water, soy milk, lemon rind, sea salt, egg white, cinnamon and baking powder

Mix these two mixtures together and add in the cooked 7 Grain Cereal, rolled oats, raisins and nuts. Bake until top is golden brown

This is not a very sweet cake. May be served with apple butter, honey
